If you’re looking for the perfect breakfast to satisfy both Team Sweet and Team Savoury, then our delightful whipped feta and roasted strawberries recipe is the answer. It’s the ideal blend of creamy and tangy goodness, all on top of delicious fresh sourdough. Enjoy it in the summer with fresh strawberries, or any other time of the year with frozen ones.
Ingredients
- Two handfuls of fresh strawberries (8 – 10 depending on size)
- 1 tbsp. balsamic vinegar
- 1 tbsp. Honey
- 100 gr DODONI Feta
- 2 tbsp. DODONI Greek yoghurt
- Olive oil
- Fresh basil
- Fresh crusty bread
- Lemon juice
Process
1.In a food processor, add the feta, Greek yogurt and lemon juice and blend until smooth. Drizzle in the olive oil as its blending. Transfer to a bowl and chill in the fridge for 30-60 minutes.
2.Preheat oven to 175°C. Slice your strawberries in half and toss them in balsamic vinegar and honey. Spread the berries on a lined baking sheet, and roast in the oven for 30 – 35 minutes. (Top Tip: The added honey helps the strawberries become even sweeter and tastier!)
3.Slice some crusty bread and spoon out the feta mixture.
4.Remove the strawberries from the oven and allow them to cool slightly before piling them on top of the bread. Garnish with some chopped basil for maximum flavour!
