Ingredients
- 1 cup flour
- ¼ tsp salt
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp cinnamon
- ¼ tsp nutmeg
- ¼ tsp ground ginger
- ¼ tsp vanilla powder
- 2 large eggs
- ⅓ cup milk
- ½ cup pumpkin puree
- 3 tbsp honey
- ¼ cup DODONI Greek yogurt
Toppings:
- ½ cup DODONI Greek yogurt
- Honey (to taste)
- Fresh raspberries
- Sprinkle of cinnamon
Process
- In a large bowl, whisk together the flour, salt, baking powder, baking soda, cinnamon, nutmeg, ginger and vanilla powder.
- In a separate bowl, whisk the eggs, then add milk, pumpkin puree, honey and DODONI Greek yogurt. Mix until smooth and creamy.
- Slowly pour the wet mixture into the bowl of dry ingredients. Stir gently until just combined – don’t worry if the batter is still a little lumpy!
- Heat a lightly oiled skillet over medium heat. Pour about ¼ cup of batter for each pancake. Cook for 2-3 minutes per side or until golden brown.
- Mix DODONI Greek yogurt with a squeeze of honey. Stack the pancakes, dollop with the delicious yogurt mixture, drizzle with honey and sprinkle with raspberries and cinnamon. All that’s left to do is enjoy every fluffy bite!
