Ingredients

  • 200g Dodoni Halloumi
  • 2 egg noodles nests
  • 1 red pepper
  • 1 green pepper
  • 1 small onion
  • 2 small carrots
  • 2 spring onions
  • 2 garlic cloves
  • Thumbnail piece of ginger
  • 2 tbsp vegetable oil
  • 2 tbsp sesame oil
  • 3 tbsp soy sauce
  • 2 tsp oyster sauce
  • 1/2 tsp Chinese five spice
  • 75ml vegetable stock
  • 2 tsp lemongrass
  • Salt and pepper

Process

  1. Cut the Halloumi into small pieces and place in a bowl with 1 tbsp sesame oil, 1 tbsp soy sauce, Chinese five spice and lemongrass. Let this marinate for 30 mins
  2.  On a high heat add vegetable oil to a wok with the marinated Halloumi, garlic and ginger. Once the Halloumi starts to crisp and brown add in 1 tbsp of soy sauce, 1 tbsp of oyster sauce and a splash of vegetable stock. Wait for the sauce to thicken and then remove and set aside
  3.  Add sesame oil to the wok and stir fry the chopped vegetables for 3 minutes. Add the garlic and ginger and cook for another 2 minutes before pouring in the remaining soy sauce and vegetable stock
  4.  Place the noodles nests into boiling water until soft and drain
  5.  Finally, combine the Halloumi, vegetables and noodles, toss well, sprinkle over the spring onions and serve
