For a touch of lunchtime inspiration, check out our Crispy Halloumi Power Bowl. Just grate a block of DODONI Halloumi with a cheese grater, toss it into a dry hot pan, and fry until golden brown – your favourite salad is officially elevated!
Ingredients
- 1 cup cooked quinoa
- 1 x cooked chicken breast
- 1 cucumber – ½ grated, ½ chopped
- Handful of fresh dill
- Green onion
- ¾ cup DODONI Greek yogurt
- Lemon juice
- 125g of DODONI Halloumi
- Small handful of pomegranate seeds
- Olive oil
- Balsamic vinegar
- Bag of chopped kale
- Salt and pepper to taste
Process
- Halloumi topping: Grate your halloumi using a cheese grater, and sprinkle into a dry pan. Stir over medium heat until golden brown and crispy.
- Create your bowl base: Massage kale with a splash of olive oil, lemon juice and balsamic vinegar until tender. Add cooked quinoa, half of a chopped cucumber, and a cooked chicken breast to the top of the kale.
- Make your dressing: Grate the remaining half of the cucumber and squeeze out the liquid. Mix up Greek yogurt, lemon juice, green onion, dill, grated cucumber and salt & pepper to create a tzatziki dressing. Add a dollop of this on top of your bowl base.
- Toppings: Sprinkle the grated halloumi along with pomegranate seeds onto your salad bowl and enjoy!
