Enjoy a delightful twist on classic feta with these crispy air-fried bites. Coated in seasoned breadcrumbs and air-fried to golden perfection, each bite offers a satisfying crunch. Served with a fresh, tangy salsa verde made from parsley, oregano, and a hint of pickle, these bites bring vibrant Mediterranean flavours to any occasion. Perfect for sharing as a snack or starter.

Ingredients
- 2 blocks of DODONI Feta (200gr each)
- 2 cups flour
- 2 eggs
- Breadcrumbs
- 1 tbsp. dried oregano
- 1 tbsp. paprika
- Olive oil
Salsa verde ingredients:
- Handful of parsley
- Handful of fresh oregano
- Handful of chili flakes
- ½ cup olive oil
- 2 large gherkins or pickles
- Spark of gherkin/pickle juice from the jar
- Splash of red wine vinegar
Process
For the feta bites:
- Prepare the coating: Place 2 cups of flour in a shallow dish and add 1tbsp paprika. In another bowl, beat the 2 eggs. In a third dish, mix the breadcrumbs with 1 tbsp dried oregano.
- Coat the feta: Cut the DODONI Feta into bite-sized cubes. First, coat each cube in the seasoned flour, then dip it into the beaten eggs, and finally roll it in the breadcrumbs mixture until fully coated.
- Air fry the feta: Place the breaded feta cubes in an air fryer basket, drizzle with olive oil, and cook at 200°C (390°F) for about 10-20 minutes until golden and crispy. While you wait, prep the salsa verde.
For the salsa verde:
- Prep the gherkins: Finley dice the 2 large gherkins (or pickles) and add them to a blender-safe bowl.
- Chop the herbs: Finely chop a handful of fresh parsley and a handful of fresh oregano, then add them to the bowl.
- Add liquids: Pour in ½ cup of olive oil and a splash of red wine vinegar. (Top tip: you can add a small splash of gherkin juice from the jar for an extra tang!)
- Season: For a bit of heat, season the mixture with a generous pinch of chilli flakes!
